120g corn flour
100g all purpose flour
125g unsalted butter
120g sugar
200ml milk
5 egg yolk
5 egg white
20g dried grapes
10g powdered vanilla and sugar
¼ teaspoon salt
Preheat oven to 180 degrees C.
Combine egg yolk, sugar, salt, powdered vanilla and sugar in a large bowl and beat at a high speed until smooth.
Add corn flour, all purpose flour, butter and milk. Mix at a low speed until combined. Do not overmix. Set aside.
In a separate bowl, beat egg white at a high speed until firm white peaks.
Add egg whites mixture and dried grapes to egg yolks mixture. Mix quickly at a low speed until combined. Do not overmix.
Pour into prepared non-stick pan. Bake for 30 minutes, until the top is lightly golden or until the cake is set and a toothpick inserted into the middle comes out clean.
